Credit has to be given where it’s due and for the first time since they made free fruit bins available to kids, Countdown Supermarkets have another major positive I’m willing to support – their Macro range!

It is made up of healthy whole foods in the green pack and organic options in the purple, and have been price locked to make them more suitable for growing families on a budget, and those who want to be a bit more conscious about healthy and organic alternatives at their local supo.
Now as lovely as it would be for us to shop on a bicycle at a local farmers market and packaging free store, and trust me, I am still encouraging this for whenever possible, I know some people simply are not able to do so. So here at least, I can support the brand and the products that are available, and I will always be happier with more organic options on the shelves.

I was approached to create a recipe using Macro products – there were a few that jumped into my mind simply by seeing their full range – nachos for instance that are cheap and easy but in the end I chose my favourite life-changing bread recipe and adapted it to suit their ingredients.

Everything with a * has been sourced from the Macro range. The rest are staples in my pantry.

This is vegan, dairy free and gluten free and goes best pre-sliced and stored in the freezer for emergency afternoon tea and filling brekkie options.


2 1/4 cups ground almonds*
1/4 cup psyllium husk*
1/2 cup walnuts*
1/4 cup black or white sesame seeds
1 cup pumpkin seeds*
3/4 cup almonds*
1/2 cup flaxseeds
3 tablespoons chia seeds*
2 tablespoons pure maple
1/4 cup olive or coconut oil*
2 1/4 cups water
1 tsp turmeric powder
Black pepper to taste

Mix everything well and then placed into a lined tin.
Leave in fridge overnight to set and then bake until cooked through Approx 1 hour 15 minutes or until a skewer comes out clean. Some decent ovens may take an hour.
It is best sliced and stored in the freezer to toast as you need it. Serve with beetroot chutney and avocado or with poached eggs for brekkie.
